Fresh, Sweet and Crunchy Microgreen Salad

Microgreen Salad with Chicken, Mozzarella, Cucumber, and Apples! This is a great bright but filling salad and so easy to make!

1. Grill or roast chicken until cooked through and cut it into bite-sized pieces. We love using chicken we made the day before.

2. Slice cucumbers, apples and mozzarella cheese.

3. In a large bowl, add a large handful of your favorite microgreens (peas, basic salad, broccoli and/or buckwheat).

4. Add in the chicken with sliced cucumbers, apples, and mozzarella cheese. and Toss with your favorite dressing balsamic vinegar, and olive oil.

5. Enjoy!
